This is a wonderfully vibrant and green soup you can enjoy when days are getting dull and damp, and energy levels are low. The bright green nourishes and balances the heart chakra, and don’t we all at times need a bit of love and brightness from the inside? So get a few ingredients together, put on your favorite music, and enjoy this special treat!
- 1 tbs of high quality coconut oil
- 2 small onions (diced)
- 1 garlic clove
- 5 small (or 3 bigger) potatoes (cooked and peeled)
- 2 Handful of fresh spinach
- 600 ml vegetable broth
- 1 pinch of ground nutmeg
- 1 tsp ground cumin
- salt and freshly ground pepper
To serve with:
- oat alternative to cream (Oatly)
- a few sprigs of fresh dill finely cut
Best results you probably get with a blender (Vitamix). Put the ingredients into the blender in the listed order and run the program (soups).
Otherwise get out a pot, fry the onion in the coconut oil until soft, then add the finely diced garlic. Add the spinach first and keep simmering on low heat, until the spinach has been reduced in volume. Then add the potatoes and the broth, season with the nutmeg, cumin, pepper, and salt. Cook for about 15-20 minutes. Use a hand blender to make it into a creamy soup.
Top with the oat cream and some freshly cut dill – serve with some sour dough bread or ciabatta!
